Sturgeon is the common name for 27 species of fish belonging to the Acipenseridae family, the first of them dating back to the early Jurassic period. These fish are now endangered species and the fishing of them in open waters is no longer permitted. The Sturgeon farmers are farming these astounding creatures with extreme respect for the ecosystem. They are saving them from extinction, and many are released back into the oceans. Sturgeons are similar to salmon in that they are born in fresh water, move to salt water and then head back to fresh water to spawn.
