Over 40 years ago, three friends started up a small caviar business on the banks of the Caspian Sea. Very quickly the demand for this delicacy increased as the taste was acquired. It was refined, enticing and reeked of luxury, for the chosen few.
Over time, the sturgeon fish from which these cultured gems are harvested were placed on the endangered species list. Out of necessity, the decision was made to farm these rare creatures. This began in Northern Italy with the exact same sturgeon from the Caspian Sea, that they shipped over to Italy. The sturgeon now live in constantly flowing fresh, uncontaminated waters near lake Garda, within the natural environment that surrounds them.
12 long years later with much love and care, the first harvest of these little black pearls was produced.

With over three generations of aquaculture know-how, these sturgeons are currently cared for by farmer Marco who truly nurtures them. The entire artisanal process of farming, harvesting, sorting and packing is all done tenderly by hand.
